My tackle for today is My Oath Taking! You're probably wondering what's an oath taking. It's when I take the oath to be an American. It may take about 60mins as written in the notice but a friend of mine who went thru the same thing said it could take 3hrs! Becoming a US Citizen is a great privilege! Though I am not denouncing my Filipino Citizenship, I may become as what they call "dual citizen". I will always be a Filipino no matter what and I will be very proud to be an American too! So, it's worth celebrating...dinner at the restaurant shall follow!

Menu Plan Monday #5


(Cooking Recipe)

  • MONDAY
Pancit Canton

1 package of Pancit Canton Noodles (w/ mix included, if there's no mix, add soy sauce & 2 broth cubes in the recipe)
1 or 2 chicken breast
1 & 3/4 cup of water
garlic & onion
salt & pepper
2 cups cabbage
2 cups carrots

Fry garlic & onion in a pan w/ hot oil. Add chicken, if no longer pink add water & mix sauce. Let it simmer for 10-15mins. add carrots & cabbage. Simmer for another 10mins. Add the noodles and stir occasionally until all the water is absorbed by the noodles & when the veggies are half done. You can add more water if necessary & don't forget salt & pepper.
  • TUESDAY - Dinner at Red Lobster (my oath taking day)
  • WEDNESDAY - Mac & Cheese & breaded chicken breast
  • THURSDAY
Tuna Patties w/ potatoes

2 cooked shredded potatoes
1 onion bulb (diced)
1 egg
1 (6 oz) can tuna
1/2 tsp mustard
dash of pepper
slices of cheese
bun

Combine potatoes, onion, tuna & egg. Sprinkle some pepper and add mustard. Roll into patties. Heat oil in a pan & fry each patties for abt 3-4mins each side (until golden brown). Sandwich patties in a bun w/ cheese.

  • FRIDAY - stir-fried chicken w/ veggies & rice
  • SATURDAY - leftover
  • SUNDAY - leftover still

  • MONDAY - yogurt, cereal, juice - mc & cheese, chicken strips - tuna noodle casserole
  • TUESDAY- crepes, grapes,juice - tuna noodle casserole - baked chicken & rice
  • WEDNESDAY- yogurt,english muffins - baked chicken & rice - cabbage rolls, mc&cheese
  • THURSDAY-egg sandwich, juice - cabbage rolls,mc & cheese - couscous, tilapia & cauliflower chopseuy
  • FRIDAY - yogurt,oatmeal,juice - tilapia & rice - skillet cabbage & tuna sandwich
  • SATURDAY - pancakes, juice - tuna sandwich - rice & stir fried veggie & chicken
  • SUNDAY - cereal, juice, yogurt - any leftover

PHOTOHUNT THEME: DRINKAhhhhh...this is the only soda that I can truly say...refreshing!!! especially the Lemon Flavor, it juz soothes my throat! I've been a soda drinker ever since my father worked for Pepsi-Cola Company for abt 13yrs & we have always been supportive w/ pepsi products (well of course, that was our source of income back then) When he wasn't working there anymore, I started to try Coke products (it sounds silly, I know!) and I wasn't so thrilled how it tasted, I guess for 13yrs of getting used to pepsi, it's the only taste I am used to! I am truly amazed of all the varieties of soda in this country & I tried everything but the only one that that I like above all is Sierra Mist & hubby told me it's a pepsi product!No wonder why...

Today's tackle is the list of the stuff I gotta do:

  • School tour for my eldest preschool 9:30am
  • Fold some laundry
  • Put it away on designated dresser
  • Wash pots & pans
  • Visit & comment to fellow bloggers for tackle it tuesday
  • Try to clean some toilets too, if I can
  • Put away some clothes (i got a habit of changing several times when I need to go somewhere so, I end up w/ a pile of clothes on the floor at my closet,tsk...tsk...tsk!!!)
  • Prepare dinner
  • Give kids a bath before going to bed
  • Visit this blog again later
  • Watch tv until I fall asleep!!!
Sounds boring isn't it??? Well, who knows there might be a twist!

  • Tuesday - Fried Chicken & steamed rice
  • Wednesday - Pinakbet (my own recipe)

1 c okra
1 c eggplant
1 c squash
soysauce
1lb chicken
onions
garlic

Fry garlic & onion in a hot oil. Add chicken & flavor w/ soysauce, cook until brown. Add squash, when half cooked, add eggplant & okra. simmer for 15-20mins. add more soysauce if desired. Salt & pepper to taste.

  • Thursday - Fried fish, steamed veggies & rice
  • Friday - Seafood Restaurant
  • Sat & Sunday (undecided)

Menu Plan Monday #2

(Cooking Recipe)

  • Monday
Chicken Stir fry (my own version)

2 skinless boneless chicken breast(diced)
clove of garlic
onion
a cup of cut up zucchini
a cup of cut up carrots
maggi soy sauce
pepper

Fry garlic & onion in a hot oil. Add chicken, when it's no longer pink, add some soy sauce. After several mins. add carrots and let it cook for a little while then add zucchini, stir occasionally. Flavor it with some pepper & salt, if you like...cook for more until veggies are half cooked. Serve with steamed rice!

  • Tuesday
Fried tilapia seasoned w/ lemon pepper, Couscous & Green Peas w/ corn

  • Wednesday
Chicken Pad Thai

1box(9oz) of Thai Kitchen Original Pad Thai
3 tbsp vegetable oil
1 egg
4 oz cut chicken, shrimp or tofu
1/2 cup fresh bean sprouts
1/4 cup crushed peanuts

Optional:
lime wedges, fresh chilies and cilantro

Boil 3 cups of water. Turn off the heat and soak noodles in hot water for 3-5mins, until soft but firm. Drain well, rinse w/ cold water for 30sec. Set Aside.
In a wok or large frying pan, heat up oil. Add egg & fry until scrambled. Remove & set aside.
In a wok or large frying pan, heat oil. Add chicken/shrimp/veggies/tofu & stir fry until cooked. Add softened noodles & sauce. Stir-fry for 3-4mins until noodles become tender & sauce is absorbed by the noodles. If noodles are still firm, add 1tsp of water as needed & continue to still fry until tender. Add bean sprouts & scrambled egg. Sprinkle with peanuts and garnish with lime wedges/chilies/cilantro, if desired.

  • Thursday

Fried Rice, Tilapia & Steamed Veggies

  • Friday
Mung Beans(my own version)

1cup of mung beans
2 skinless boneless chicken breast(cut up into pieces)
1cup chicken broth or 2 cubes of chicken broth
10cups of water(it depends if u want it soupy or not)
green leafy veggie(bokchoy, spinach)
1cup carrots(wedged)
1cup eggplant(cut into bigger pieces)
onion
garlic
soy sauce
pepper

Fry garlic & onion. Add chicken and when no longer pink, add soy sauce. Cover and cook for about 5mins or until chicken is half done. Set Aside. Boil mung beans until it is almost done, add chicken,chicken broth and carrots. Cover & simmer for about 15mins. Add eggplant, cook for more 5-8mins.Season with pepper & salt. Add the leafy veggie and remove from heat when veggie is half done. Serve with rice.

Left over mung beans & rice

  • Sunday
Gotta eat out or order a pizza
